Easy Mexican Three Bean Salad Recipe

Recipe for Mexican Three Bean Salad
What You Need
- 1 can cut green beans
- 1 can pinto beans
- 1 can black beans
- 3 Tablespoons olive oil
- 3 finely sliced green onions
- 1 large diced garlic clove
- 2 seeded and chopped jalapenos
- 1 cup crumbled queso seco cheese
- 1/3 cup lime juice
- ¼ cup sugar
- ¼ cup fresh chopped cilantro
- Salt to taste
How to Make It
Using a colander or strainer drain and rinse the cut green beans, the pinto beans and the black beans. Allow to drain and then place beans together in a large mixing bowl.
Drizzle oil over the beans and then toss to thoroughly mix them together.
Add green onions, garlic, jalapeno, and cheese to the bean mixture. Toss to thoroughly mix together.
In a small mixing bowl, add the lime juice and sugar, while using a whisk stir to dissolve sugar. Drizzle this liquid over the beans and then toss to thoroughly mix together.
Cover bowl with a lid or plastic food wrap and then place in the refrigerator to marinate and chill for 2 to 3 hours. Before serving add salt to taste and toss in the fresh cilantro.
Three bean salad is a wonderful side dish as well as a great snack when you enjoy the savory sweet yet spicy mix of flavors. You can serve between 4 to 6 people using this recipe. For some individuals three bean salad makes a great brown bag meal at the office or at school. However, it will need to be refrigerated to keep it chilled and fresh.
